French Toast

Preparation time: 15 minutes
Cooking time: Approx 15 minutes, depending on what bread you use
Serves: 4

What you’ll need

  • 8 large free range eggs
  • 600ml double cream
  • 4tsp cinnamon
  • 4 tsp nutmeg
  • 8 slices/chunks ciabatta bread

Whisk together the eggs, cream & spices until the mix is pale & smooth. Tip into a large tub or bowl.

Take your chunks or slices of bread, place them in the egg mix, give each piece of bread a light squeeze into the egg mix & make sure every piece is properly coated. This will also help prevent them all sticking together. We make this the day before at the café & leave overnight in the fridge. If you are using thin bread then do not leave it overnight, as it will fall apart.

When its time to cook, heat a heavy bottom fry pan with a little oil & cook on both sides until golden brown.

You can use whatever toppings you like, some ideas are:
Fresh fruit salad, grilled bacon & banana, blueberry compote, fresh berries, orange slices, maple syrup, whipped cream.
